No Six Depot No Ordinary Cold Brew




   Today I present to you a bean from No Six Depot out of West Stockbridge, Massachusetts. No Six Depot's guiding mission is to keep it simple and make it true. They hand roast the highest quality, most ethical green coffee beans in small batches. They roast by hand, not by computer profile. Each bean and each crop is different, so they treat each batch as if cooking a meal -- using eye, ear, nose, experience and some creative experimentation. Their goal is to bring out the unique regional qualities in each bean. They source only natural coffees, teas, salts--grown responsibly by those who take pride in their work and are recognized for their effort. In April 2017, they opened their new roasting room where the public can come in and see the roasting process and where they will hold cuppings and classes.

   This is their No Ordinary Cold Brew Blend. This consists of a blend of aged, Monsooned Malabar and high-grown Brazil Oberon. No Six Depot describes this coffee as having a smooth, chocolate-y, almost cognac quality with virtually no acidity. Flavors of chocolate & cocoa nib. The monsooned malabr is a neat bean as it starts as a naturally-processed coffee bean, which is then meticulously weathered, or “monsooned,” to result in a chocolatey, woody, nutty coffee. I brewed this at my 1:12 ratio. This was a very tasty blend. Single Origins probably make up 90% of the coffees I brew, but this blend was definitely constructed well. It made for a great cup of cold brew. Lots of chocolate in the cup. Caramel & toffee & nuts as well. Very smooth, no acidity. Bet this is also great as a pourover with some cream to highlight the chocolates. Very nice cold brew blend.
